Kitchen Intuition: Tomato time!

The tomatoes have arrived! You may not have them in your garden yet, but the local farmers have worked their horticultural magic, and tomatoes are starting to show up at the local markets. And, oh, they are so juicy and delicious. You just can’t get a tomato in a store that is anywhere near as delectable as a freshly picked summer tomato.

Of course, it's not going to be possible for me to do the tomato justice in just one column. In fact, I think I might be crazy to attempt to write about the tomato at all. As Alan Davidson points out in "The Oxford Companion to Food," the "total number of dishes around the world in which tomato is the or a main ingredient must amount to thousands." In the United States, tomatoes are second only to potatoes in annual vegetable consumption.
